The plan is let the dome mortar dry a full month so I know its dry...that puts the first fire about 10/6. Then they say a series of small to hotter fires is best....so pizza party the next weekend I guess?

I'd love to have more pizza recipes! What kind of things do you adjust for altitude?

I mostly have to adjust how much yeast I use since dough rises more quickly at higher altitudes. I use a commercial yeast called "saf-instant" and a bit of sourdough starter I've been cultivating for years. Other additives are Brewer's Barley Malt, semolina flour, powdered milk, all in tablespoon-sized amounts. I once even used pickle juice to make bread, Ended up with a dill-dough. (Bad pun, but I really did make it and it's a standing joke with my family).

Adjusting is really a trial-and-error process of using more or less flour, more or less liquid and less yeast. An additional rising cycle and higher heat setting. It doesn't matter as much for pizza as it does for bread.

I bake mine in a regular wall oven with a 1" granite slab at 475º. Your oven will be much hotter so you'll have to experiment.

I tried to send you a PM with the recipes, but it won't accept a .doc (Microsoft Word) file. If you PM me a regular email address I'll be happy to send them on. Pay special note to the procedure to make a sourdough starter. You'll want to get it started well in advance of first use. Gives incredible flavor to the dough.

Feeling a little lazy today so I tackled a couple little things like cleaning up the stucco mess around the base, sanded the sharp corners off the brick and a quick acid wipe (wearing gloves! :) ) to get the haze off the bricks....looks better I think.

1st fire tonight. Very small, 1 small stick of wood split to 6 or 8 bits,just let it warm up a little. The plan is to cook Saturday

Huge fire is required I'm told. Notice the dome is burned clean, so over about 750F

UPS just brought me a new project. It looks like I'm building a door for the pizza over that is supposed to match the grill and will let me bake/roast in the oven. I suspect this is required to be completed for Thanksgiving as in Lana's expecting me to cook this year
