My little 1600cc BDA in my little Lotus Europa are not in the same league as the FrankenFerrari but it made sense to me to ditch antifreeze and go with Waterwetter and distilled water. Where I live, the winters are fairly mild (i.e. occasionally snows but not every year) but that doesn't matter since I keep my car in an unheated garage where it NEVER gets near freezing anyway. I don't know that I've ever driven it in freezing weather but if I have, it doesn't sit outside long enough for freezing to be an issue. So freezing is not an issue. That being the case, why bother with antifreeze? I also have no concerns with overheating partially because I never go downtown and get in any traffic jams but I doubt I'd have a problem even then.
Before using Waterwetter, I did have to back off the ignition timing a bit to keep it from pinging but I wouldn't claim that Waterwetter made that difference.
Every year, I drain the coolant and replace it with new distilled water and a new bottle of Waterwetter.
I also have no problem with water leaks but I have an old tech cast iron block so I can understand your caution but it would be worth an email to the Red Line folks (
